You’ll need:
- 4 oz rooibos tea
- 1 tbsp ground ginger
- 1 tbsp ground cinnamon
- 1/2 tbsp peppercorns
- 1/2 tbsp cardamom (20 pods)
- 1/3 tsp ground cloves
- 1 tbsp honey/per cup
- 1/3 cup milk of your choice
- star anise pods for decoration
Grind the peppercorns and cardamom pods in a coffee grinder or spice grinder.
Mix all dry ingredients together and transfer them to a clean airtight glass container.
Make one cup of tea: put 1 tablespoon of the mixture into a tea bag or tea strainer and pour in boiling water.
Steep Rooibos Chai for 5 minutes.
Add 1/2 – 1 teaspoonful of honey and add warm milk of your choice.
For stronger flavor, combine 1.5 tablespoons of chai tea blend (using a tea bag – I like this one) with 1/2 cup water in a small saucepan. Cover and bring to a boil. Simmer for 2 minutes. Add the milk and honey. Bring to a low simmer, stirring occasionally for another 2 minutes. Then turn off heat, discard the tea bag and serve immediately.
